Make delicious food at home




Making food is an art. Some expertise it while some remain stuck in making the basic dishes which they love to eat. But no matter what, eating healthy is a necessity and if you want to eat some delicious dishes, you can always cook it at home.

CHICKEN AND SPINACH COCONUT CURRY
 Ingredients: 8 table spoons of sunflower oil, 3 finely chopped cloves garlic, 400 grams of finely sliced shallots, 1 table spoon of peeled ginger (again finely chopped), 900 grams of skinned chicken breasts (approximately 8 pieces), 3 table spoons of mild curry powder, 5 table spoons of tamarind paste, 500 grams of baby leaf spinach and 650 ml of coconut cream.
Method: one has to take a wide sauce pan and keep it on a medium low heat and then add 5 to 6 spoons of oil in it. Once the oil turns hot, one should add the garlic, ginger and the shallots to it. Keep them frying for at least 10 minutes till everything turns golden brown. Then one has to stir the curry powder within it and cook it for 5 more minutes. Make small pieces of the chicken and add it to the pan along with the rest of the oil and start stirring it well. Do not forget to add a pinch of salt while adding the chicken. Keep stirring briskly till the chicken turns brown and then add the coconut cream along with the tamarind paste. Keep the heat to a simmer and partially cover the pan. Cook the entire thing for 5 more minutes. While this is being cooked one can drop the spinach in a large pot of boiling water. Then drain out the water and cool the spinach in normal water. Once they are cooled down, drain out the extra water from it and place it in a bow. Once the chicken is cooked, remove it from the oven and then add the spinach on top of it. Serve it hot to your family members or friends.
EASY FISH PIE
 Ingredients: 40 grams of butter, 2 leeks which are finely sliced, 100 ml dry vermouth, 350 ml of crème fraiche, 2 table spoons of anchovy sauce, 500 grams of fillet salmon, 300 grams of undyed smoked haddock and 50 grams of bread crumbs.
 Method: melt the butter in a sauce pan and add the leeks along with the vermouth. Cook them from low to moderate heat for at least 15 minutes and then take off the heat. Stir it with the anchovy sauce and crème fraiche. Add a bit if salt and ground pepper for taste. Cool it a little. Then heat the oven to 200 degree and put the fish pieces on the gratin dish. Pour the leek sauce over it, mix the bread crumb with grated cheese and sprinkle over it. Cook it for 40 minutes before serving.
